10 minutes backstage with Gavin Rossdale at Stagecoach

Gavin Rossdale and his band Bush performed at the Stagecoach festival on Saturday, joining a lineup of other 90s rock favorites. The 60-year-old singer, who recently launched a cooking show, also made an appearance at Guy Fieri’s Smokehouse alongside Billy Bob Thornton, Wynonna Judd, and Gavin Adcock. I had a chance to speak with him in between his two performances.

Is this your first time at Stagecoach?

Yeah, I was waiting for an invitation. I didn’t want to just buy a ticket – I wanted to be invited as a guest.

So, you recently did a cooking demo with Guy Fieri? How was it? It was fantastic! We had four cooks each making different dishes, and he’s just a wonderful person – I really enjoyed working with him.

It’s funny being on TV with another chef! I immediately connected with this one. When we started talking about the food, I suggested we make secreto pork – it’s a really special, flavorful cut that not many people know about. He was so impressed with that idea that he let me take the lead and cook how I wanted.

Guy Fieri didn’t know about it, and neither did I.
Oh no, he did.

Just to be clear, I wasn’t aware of what was happening. You and Gavin Adcock were both present, so there were actually two people named Gavin. This was a new experience for me.

I heard Paramount is at Stagecoach, and I was thinking – would you be interested in collaborating on a comedy with Gavin Adcock? The contrast between you two could be really funny – he’s country, you’re rock! I think it could work. We were just talking about food, and it struck me that we have very different styles – he made a steak sandwich, and I made fried chicken with Japanese flavors. It feels like we’re opposites, but if we combined our ideas, we could create something amazing.

We can discuss that proposal later tonight. But seriously, how did George W. Bush end up performing at a country music festival? That’s a much better question to start with! I honestly have no idea. I’m just happy to be here and trying not to mess things up.

The worst part is feeling completely out of touch. It’s tough to gauge what the audience actually wants. I was putting together the setlist and kept wondering, who are these people? Are they genuine country fans, people just visiting Palm Springs, or something else entirely? It’s hard to read the room.

Stagecoach isn’t just about Bush; bands like The Wallflowers and Third Eye Blind are playing too. Are you upset about those other rock acts? Not when it comes to the food – everything there was chicken! But seriously, no, I don’t hold grudges. Life’s too short to waste time on disagreements.

If I had to perform a country song, I’d choose something by Zach Bryan. His music is really great – beautiful songs that I think I could cover well, similar to how Bush does covers.
