Sunrise star Edwina Bartholomew gives fans first look at her luxurious country pub renovation

As a dedicated follower who has witnessed Edwina Bartholomew‘s incredible journey, I am thrilled to see her finally receiving approval for her dream project. This isn’t just another house-flipping endeavor; it’s a labor of love, a testament to her resilience, and an exciting new chapter in her life.

As a lifestyle enthusiast, I’m thrilled to share that after years of planning and hard work, I’ve received the green light to transform a forgotten countryside pub, nestled 251 kilometers away from Sydney, into a lavish retreat. This project has been a dream of mine for quite some time, and I can hardly wait to bring it to life!

In May 2023, the well-known host of Sunrise acquired a 177-year-old property in Carcoar, NSW. However, the renovation of this property, which is within a heritage-protected area, has faced significant setbacks.

With approval from the local council, Edwina (aged 41) and her spouse Neil Varcoe are now revealing their grand designs for a boutique hotel.

The development uncovers that the formerly known pub, now called Saltash Farm by the couple, is set to include three fresh guest cabins, a residential dwelling, and the primary guesthouse.

Plans also include a pool and long pavilion, to be built at a later stage.

As an ardent admirer speaking to Realestate.com, let me share my enthusiasm for Carcoar: it’s simply magical in winter! The chill in the air only adds to the cozy charm of each cabin, where you’ll find a blazing wood fire burning bright. The warmth isn’t just within, but extends to the outside cladding too, creating a harmonious balance between the frosty outdoors and inviting indoors.

Each room and bathroom within the main guest house showcases a unique color and style. While the ground floor features a predominantly blue palette, every bedroom possesses its distinct personality as well.

Edwina and Neil are teaming up with Studio Esteta, Melbourne-based architects, to work on their initial commercial design plans together.

The television presenter-turned home renovator recently posted a picture showing off their refurbished living room, complete with wooden workstation, fireplace, and vintage armchairs.

Other plans for the reception include large landscape paintings by  Queensland artist, Kate Pittas.

Simultaneously, it was found that the necessary approval from the Blayney council was granted following a thorough examination of the site by historians and indigenous elders, who confirmed its safety after searching for artifacts.

Last year, Edwina garnered attention when she put up her urban retreat in the western part of Sydney for sale in March 2023, priced at $2.1 million.

In the same month, Edwina and Neil, both parents to Molly, aged 4, and Tom, aged 2, completed a purchase of a new home in Carcoar at a price of approximately $2.1 million.

After purchasing the old pub, Edwina started to document her renovation process on Instagram, which she shared with her followers shortly thereafter.

Back in May, 2023, Edwina shared a video featuring ‘The Victoria Hotel’ – an establishment dating back to 1846.

The video showed off the inside the two-storey historical property and its stunning architectural design, including a beautiful balcony and French windows.

1846 saw the construction along the Belubula River’s banks in Carcoar. Exactly 177 years later, the very same ground played host once more, as The Victoria made its return to greet a fresh wave of visitors, she penned.
