Tokyo’s food scene is getting a boost with the opening of HISASHI SUSHI in Omotesando. The restaurant offers a new take on classic dining, guided by Hisashi Udatsu – the acclaimed chef behind the Michelin-starred Udatsu Sushi in Nakameguro. It aims to capture the energy of Tokyo in a fast-paced and refined dining experience.
Built around the idea of “TOKYO CODE. EDOMAE WISDOM,” this sushi brand presents its dishes as a vibrant, moving art form. The restaurant’s design blends modern street style with luxurious touches and the fast pace of city life, going beyond typical Japanese decor. The menu is built on a sense of balance and flow – a ‘rhythm’ – reflected in the restaurant’s atmosphere, service, and the way the food is prepared and presented, creating a distinctly modern Tokyo experience. Manager Tomohiro Yanase explains that they strive to honor the legacy of the previous establishment while also evolving and creating something new alongside their customers.
We carefully select high-quality ingredients. Our sushi rice is made with organic rice from Kumamoto, grown using pure water from Mount Aso. It’s perfectly seasoned with vinegar from Kyoto, agave, and salt from Itoshima, creating a wonderfully smooth texture. We also use a special glaze made with soy sauce from Itoshima and our own salt, made from fresh seawater, to enhance the flavor. With seating for 23, including 19 counter seats and a few standing spaces, we offer both individual dishes and set meals to both local and international customers.
