His method, though admittedly risky, is a testament to his unwavering dedication to crafting the crispiest Christmas spuds.

As a devoted admirer who closely follows the culinary exploits, I’d like to share an intriguing tip from the renowned MasterChef Australia alumnus aged 63. This seasoned chef has revealed his top secrets for preparing the crispiest Christmas potatoes, and among them, there lies one technique that might surprise the more timid cooks among us.
Speaking to Taste, Matt revealed that the first step toward potato perfection lay in the prep.
He mentioned that when roasting potatoes, it’s better to slice them larger than desired because they release water and shrink during the process.
He shared that the next action involved partially cooking the potatoes ‘to make them effortlessly slide off a knife when punctured’, followed by steaming them extensively to eliminate extra moisture.
He suggested, “Place them again in the heated pan, cover it, and give it a good shake. This will help increase the steam release. And remember, potatoes become crispier when they’re drier.
The following move involves roasting, and Matt openly acknowledges that his secret method for achieving crispy potatoes can be quite risky and challenging, yet it’s definitely worth the effort.
He said that you will need a high-sided pan a LOT of hot oil and nerves of steel.
As a devoted enthusiast, I’m here to share a tip: Heat up your deep-rimmed baking tray brimming with oil to its hottest point in the oven, and under no circumstances should you remove that scorching hot tray of oil from the oven.
I’d emphasize that the method he mentioned involves certain risks, and it would be wise to consider it as a collaborative task for two individuals. It’s not advisable for kitchen beginners to attempt this procedure on their own.
‘Make sure you’re with one other person,’ he said.
‘One person takes the tray out of the oven slightly, while another carefully places each potato individually into the heated oil. Once done, they close the oven door again.’
Matt added that while risky, in this case the ends justify the carb-laden means.
‘It’s really dangerous but oh my goodness,’ he exclaimed.
Matt recently shared that the passing of his brother due to epilepsy has created a 35-year-long void in his existence.
In 1988, Matt experienced the heartbreaking loss of his 22-year-old brother, William, who passed away unexpectedly due to Sudden Unexpected Death in Epilepsy (SUDEP).
A relatively uncommon situation arises when someone who is generally healthy and has epilepsy dies unexpectedly, not due to an accident related to a seizure, and no definitive cause of death can be identified.
Pondering over the heartbreaking loss, Matt shared that he continues to feel William’s absence in his everyday life.
He shared with the Herald Sun that the pain has never vanished, instead, it’s created a void in his life for the past 35 years.
In a different phrase, here it goes: ‘If he were still alive today, he would be 58 years old. There’s an emptiness that lingers, as if a piece of us is missing. It seems that while we may perceive our sorrows as private, they often echo in the hearts of others.’
As a lifestyle expert, I, Matt, can’t forget my mother Jennifer’s heartrending encounter when she found my brother William. This poignant moment, etched deep within our family’s memory, serves as a stark reminder of the challenges faced by those living with epilepsy and the urgent need for advocacy work.
He mentioned that she phoned for an ambulance, and it wasn’t until they arrived, covered in large white cloths marked ‘freezer’, that she first understood he had passed away.
In 2022, I, unfortunately, lost my life. However, the harrowing experience I endured before that point sparked an unwavering passion within me to advocate tirelessly for SUDEP Action.
He expressed his anger at the thoughtless manner in which it was dealt with, and emphasized the importance of providing comfort for those who are grieving. A meaningful way to honor William’s memory, he suggested, is by discussing this topic.
Matt has talked openly about his brother’s demise on prior occasions, and he had also disclosed that the family was oblivious to his health issues before William passed away.
Essentially, I didn’t know for sure. Neither did my family. Initially, we suspected he might be at risk, but tragically, he passed away after that, as I shared on Nova’s Fitzy and Wippa with Kate Ritchie in 2023.
